Makes 4 burgers
In a large grill pan, heat the oil on medium-high heat until shimmering, 2 minutes. Right before adding the patties to the pan, season them liberally with salt and pepper. Add the patties into the pan (if using a smaller pan, do one at a time) and cook until a brown crust has formed on bottom, 3 minutes. Flip the patties and cook for another 3 minutes (cook two minutes longer for your burger to be well-done). Top each pattie with a slice of cheese and cover with a lid or an aluminum foil tent to melt the cheese and cook for 1 more minute. Remove the patties and place on the bottom of each toasted bun.
To assemble the burgers, spread the desired amount of condiments on the top side of each bun. Layer a tomato slice, a few pickles, an onion slice, and a leaf of bibb lettuce on top of each burger patty and top with the dressed buns. Serve immediately.
1½ tablespoon canola oil
1½ pounds ground beef, separated into four ½-inch thick patties
Freshly ground black pepper
4 slices sharp cheddar cheese or pepper jack cheese
4 potato buns, sliced and toasted
Condiments, like yellow mustard and ketchup
1 large tomato, cut into ¼-inch thick slices
Sliced dill pickles
½ red onion, cut into ¼-inch thick slices
4 leaves bibb lettuce
