Makes 2 racks, Serves 4
Preheat the oven to 250 F.
Prepare a baking sheet lined with foil.
Season the ribs on all sides with freshly ground pepper, kosher salt, sugar, and chili powder. Rub the ribs until the seasoning is evenly distributed. Transfer the ribs to the baking sheet and bake for 2 hours. If using barbecue sauce, brush the ribs with an even coat of sauce 30 minutes before the ribs are done cooking.
Remove the ribs from the oven and cut them between the bones. Serve with extra barbecue sauce.
